Time To Bake: Kodiak Cakes Pumpkin Muffins
Ahh, fall. The season of golden leafs, pumpkin spice, and everything nice. I’m a Florida girl, and even though it is 95 degrees outside, I am over the moon excited to indulge in the new season, even if the weather in my town hasn’t gotten notice to cool on down!
I love the flavors that fall brings as well - pumpkin, cinnamon, apple, you name it - it’s all wonderful in my book! I recently discovered Kodiak Cakes and was excited to use the mix in muffin form. I figured since fall is upon us I might as well add in a pumpkin twist! The turnout was delicious, and the muffins are a quick and easy breakfast option for the family during our busy mornings!
Better yet, the prep for these muffins was a breeze. Double win if you ask me! If you’re interested in trying out the recipe, instructions are below:
2 cups Kodiak mix (I used the chocolate chip mix but you can use your favorite!)
1 cup milk
¼ cup butter, softened
¾ cup pumpkin puree
¾ cup brown sugar
½ teaspoon allspice
2 teaspoons cinnamon
Preheat oven to 350 degrees F.
Combine all ingredients in a large mixing bowl (I mixed the dry first and then added in the wet).
Spoon batter into muffin tins about ¾ way full.
Bake for 18-20 minutes or until muffins are golden brown on top.
Let cool completely.
